No yeast, no long kneading, and no waiting for the dough to rise—skillet flatbreads are the perfect solution when you’re craving fresh, homemade bread without the fuss. All you need to do is mix together flour and yogurt (I also like to add a little olive oil and silan for extra flavor, but they’re optional) and you’ll have a wonderful dough that can be turned into all kinds of breads. And the best part? You don’t even need an oven.
You can fill the dough with whatever cheeses you have on hand, along with spinach or corn. Or leave it plain and cook it in a skillet, much like the pita breads made on a saj over an open fire. Once they’re hot off the pan, brush them with olive oil and za’atar and serve alongside a fresh salad.
Another way to make them your own is by seasoning the dough itself. Try adding oregano, black pepper, smoked paprika, or garlic powder. It’s a wonderfully forgiving dough, so don’t be afraid to try any flavor you love.
