Stuffed Peppers in Tomato Sauce

Some of the dishes my mom makes on repeat are the ones that instantly smell like home. Stuffed peppers have always been one of them.

The funny thing is, I’ve never been much of a bell pepper person—especially raw ones. But I always loved peeking into the pot and seeing those bright red peppers bubbling away in tomato sauce. The peppers themselves? I happily left those behind. The filling, though? Oh, the filling. I could never get enough.

For years I refused to make stuffed peppers myself. I thought some recipes belonged in just one place: my mom’s kitchen. That’s where they felt most at home, and somehow they always tasted best there.

Then one day I found myself craving that familiar pot simmering on the stove, the kind that fills the whole house with warmth. Since I rarely cook meat at home these days, I created a vegetarian version packed with rice and vegetables.

The grated vegetables don’t just add flavor—they keep the rice wonderfully light while adding little bursts of sweetness and color. I truly think this version is every bit as satisfying as the traditional meat-filled one.

As for my mom’s stuffed peppers? They’ll always have a place of honor—in my heart, and in my stomach.
