A dinner that both children (and adults) really enjoy — these tortilla pizza swirls are like a sort of boureka, with an irresistible crust on top and a gooey, cheesy interior from the way the tortillas bake together with the eggs and sauce.
Just like pizza, you can use any of your favorite toppings — from olives and pepperoni to thin slices of onion or mushrooms.
Perfect even a day or two after making it — just warm for a few minutes in the oven.
And if you don’t have tortillas at home? You can use ready-made puff pastry instead.
5 ounces (150g) Bulgarian cheese, feta, or similar brined cheese
5 ounces (150g) shredded mozzarella, cheddar, or Monterey Jack cheese
1 cup sliced olives
3 large eggs
1/3 cup milk
1/4 teaspoon salt
Sesame seeds, for sprinkling on top
Instructions
- Preheat the oven to 375°F (190°C).
- Spread a tortilla with matbucha or tomato sauce. Sprinkle over Bulgarian cheese, shredded cheese, and sliced olives.
- Roll the tortilla into a tight log.
- Cut the roll into slices about 2 inches (5 cm) thick. Place the slices in a round or rectangular baking dish, with the cut side facing up. Repeat with the remaining tortillas.
- Whisk together the eggs, milk, and salt. Pour the egg mixture over the swirls.
- Sprinkle with sesame seeds.
- Bake until beautifully golden, about 40–50 minutes.
Notes
- You can absolutely play with the cheeses and toppings. Add pepperoni, paper-thin slices of red onion, basil, and more.
- Instead of tortillas, you can use puff pastry.
- Instead of milk, you can use cream.
