Honestly, from her video alone it’s pretty obvious this is a dream of a bite. But the truth? It’s one of the wildest things I’ve tasted lately. So good, so smart, that I genuinely don’t understand how none of us thought of it earlier.

But wait—what exactly is it?

Imagine juicy chicken schnitzel wrapped in a crispy golden potato latke. A thin, soft layer of potato pressed right against the chicken, with a deeply crisp outer layer that almost tastes like french fries.

Ingredients

• 6–8 thin chicken breasts 
• 6 potatoes, washed
• 2/3 cup breadcrumbs
• 2 tablespoons cornstarch or all-purpose flour
• 1/2 teaspoon salt
• 2 large eggs, beaten
• 1 cup all-purpose flour

Instructions

- Finely grate the potatoes using a box grater or a food processor.
- Squeeze the potatoes out very, very well and transfer to a bowl. Add the breadcrumbs, cornstarch (or flour), and salt, and mix.
- Place 1 cup flour in a shallow plate and the beaten eggs in a second plate.
- Coat each chicken cutlet first in flour, then in egg, and finally in the potato mixture. Press the coating firmly onto the chicken. Repeat with the remaining cutlets.
- Pour oil into a wide skillet to a depth of about 3/4 inch (2 cm). Fry the schnitzel latkes on both sides until deeply golden and crisp.

Notes

- Just like regular schnitzel, you can play with the flavors: add mustard or ketchup to the eggs, or black pepper and paprika to the flour. But honestly? Salt alone is the most delicious version.
- No need to peel the potatoes—just wash them well.
- It’s really important to squeeze the potatoes thoroughly. We want crisp potato strands here, not potato liquid.
- You can grate one carrot and/or one onion together with the potatoes if you like.
