These rolls are a fun twist on pizza pinwheels and flaky bourekas, featuring a crisp, golden top and a soft, flavorful interior, all thanks to the simple combination of tortillas, eggs, and sauce. Just like with pizza, you can customize the filling with any toppings you love, from olives and corn to thinly sliced onions or mushrooms. They’re just as delicious one or two days later, simply reheat in the oven for a few minutes and enjoy.

Ingredients

- 5–6 flour tortillas
- 1 cup tomato or pizza sauce
- 5 oz Bulgarian cheese or feta
- 5 oz shredded yellow cheese (like cheddar or gouda)
- 1 cup sliced olives or corn kernels
- 3 large eggs
- 1/3 cup milk
- ¼ teaspoon salt
- A sprinkle of sesame seeds for topping

Instructions

- Spread tomato sauce over a tortilla and sprinkle with Bulgarian or feta cheese, shredded yellow cheese, and sliced olives.
- Roll the tortilla tightly into a log.
- Slice the roll into pieces about 2 inches thick and place them cut-side up in a round or rectangular baking dish.
- Whisk together eggs, salt, and milk, then pour over the rolls.
- Sprinkle sesame seeds on top.
- Bake in a preheated oven at 375°F (190°C) until golden brown, about 40–50 minutes.

Notes

- Feel free to mix and match cheeses and toppings. Corn, thinly sliced red onion, basil, and more all work well.
- Puff pastry can be used instead of tortillas.
- You can substitute cooking cream for milk if you prefer a richer texture.
