An impressive and festive dish that can be prepared in just a few minutes. Cut the chicken, sprinkle with seasoning and put in the oven. And the result? Incredible. Cutting allows the heat of the oven to seep through into the chicken and season each slice whilst avoiding drying it out
Hasselback chicken with honey sauce

-4 whole chicken breasts
-2 peeled purple/white onions|
-4 tablespoons olive oil
-4 tablespoons honey (or maple as a substitute)
-4 sprigs of thyme leaves
-1 teaspoon coarse/fine salt
-¼ teaspoon ground black pepper
For garnish (optional):
½ cup pomegranate seeds
¼ bunch parsley leaves
Instructions
- Cut the onions into quarters.
- Cut the chicken breast into 0.4in thick slices, but do not cut all the way through, only approximately 0.8in in. Place on a baking sheet.
- Drizzle a tablespoon of olive oil, a tablespoon of honey, salt, pepper and a few thyme leaves over each breast.|
- Spread the onions around (can add garlic cloves too).
- Transfer to an oven preheated to 400° fahrenheit on turbo mode and bake for 20 minutes or until golden brown. It is highly recommended to also baste the chicken with the liquid while roasting.
- If after 20 minutes the chicken is ready but has not yet turned a nice color on top, transfer the oven to the upper grill mode for a few minutes. Â
Notes
- Because of the short baking time, you can add anything that bakes quickly to the pan, such as garlic, zucchini, peppers, cauliflower, and more.
- Pomegranate seeds add a festive flare for the holiday table.
- Chicken can be prepared in advanced and simply heat it up a little before serving.
- Be generous with the honey/cinnamon/maple.
