2 Large eggs
1/2 cup (3.5 oz) white sugar
1/3 cup (2.7fl oz) oil (any type you like)
1/2 cup (4 fl oz) black beer
1 ⅕ cup (8.8 oz) pitted dates
3/4 cup (6 fl oz) water)
1/4 teaspoon cinnamon
1 teaspoon high-quality vanilla extract
1 cup (5 oz) white flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 cup (4.2 oz) natural pecans
For the caramel:
6 tablespoons muscovado or dark brown sugar
3/4 cup coconut cream (can substitute for plant-based milk or heavy cream for a dairy version)
⅓ cup (1.8 oz) chopped natural pecans
Instructions
- Preheat the oven to 325 ° fahrenheit (top-bottom heat).
- In a food processor, grind the dates and water until a relatively smooth paste is formed.
- In a large bowl, place eggs, sugar, oil and beer and beat well.
- Add the ground dates with the water, cinnamon and vanilla extract and beat.
- Add flour, baking powder, and baking soda and mix just until the flour is incorporated.
- Combine in cut up pecans - Transfer the batter to a well-greased pan. You can use an English cake pan or one with a hole in the centre.
- Bake for 40 minutes or until the cake is browned and a toothpick inserted into the center of the cake comes out with moist crumbs.
- In a small saucepan, place sugar, coconut cream or plant-based milk or sweet cream and cook together over low heat until a brown caramel sauce is formed. It is important to stir every few seconds so that the sauce does not burn.
- Drizzle the sauce over the cake, sprinkle with chopped pecans and serve.

- Instead of white sugar in the cake, you can use regular dark brown sugar.
