This is a recipe for anyone who likes putting in a little extra effort and wants a challenge. There aren’t any complicated steps—it’s mostly about making a trip to a baking supply store to pick up a thermometer, pectin, and glucose syrup.
By the way, I also like adding pectin to my jams because it thickens them quickly, and glucose syrup goes into almost all of my ganaches. It makes them shinier, as well as more elastic and pliable. So you’ll have plenty to do with whatever you have left over. Otherwise, you can always make more strawberry jellies.
