“You have to meet Hilit,” a friend wrote to me. “She’s talented, wonderful, and her food is healthy and so delicious.”
That was all I needed to hear before arranging a meeting to learn from someone who has helped so many people change the way they eat—and the way they think about food—to do it in a way that’s both delicious and joyful.
Let me introduce you to Hilit Savir Tzidon (@hilitsavirtzidon). She’s a chef focused on healthy cooking and teaching workshops (both online and in person), and until recently also worked with clients on improving their eating habits.
Twenty years ago, after feeling that her body needed a change, she transformed the way she ate. Since then, in her kitchen overlooking the rooftops of Tel Aviv surrounded by planters overflowing with herbs, she has been creating gluten-free, naturally sweetened dishes—so good that even people who usually roll their eyes at “healthy food” ask for seconds.
When she arrived at my house with salmon, zucchini, and flaxseed, I found myself wondering how a meal was supposed to come out of that. But as if by magic, within an hour there was a wonderful spread on the table—without a trace of gluten but bursting with vibrance and aroma. More than anything, it was food clearly made with tremendous respect for the ingredients themselves.
That morning I tasted three wonderful recipes from Hilit: an incredible 2-ingredient crepe (I’m not counting the turmeric and salt, okay?) without a speck of flour or oil, herb-coated salmon that was so moist it was as though it had been cooked in some kind of special machine instead of a regular oven, and one of her most popular dishes—zucchini noodles that beautifully retain their color and texture while still mimicking a satisfying bowl of pasta.
Of all of them, this time I’m bringing you her amazing crepe recipe, and I promise I’ll share the others soon.
And while I’m at it, I’d like to say a huge thank you to Hilit—not only for the food, which proves that healthy and balanced can also be joyful and incredibly delicious, but even more for the inspiration she is. For her wisdom, for the sense of calm she brings with her whenever she walks into a room, and for the many hours I’ve spent watching her on Instagram and dreaming that one day I’ll live exactly like that. With a deep connection to ingredients, an enormous love of food, and great respect for the body that carries us through life.
