This is one of those small kitchen moments that never ceases to surprise me. You look at the bowl and think—this can’t really turn into crackers.
And then it does.
2-Ingredient Oat and Tomato Crackers
PrintIngredients
- 2 cups oats
- 3 ripe red tomatoes
- 1 tablespoon olive oil (optional)
- 1/2 teaspoon salt
Instructions
- In a food processor, blend the oats and tomatoes until smooth. If needed, add a little olive oil for a smoother texture and extra flavor. At this stage, you can add salt and any seasoning you like—dried oregano, garlic powder, or other spices.
- Line a baking sheet with a sheet of lightly greased parchment paper and spread the mixture into a thin, even layer.
- Sprinkle with any toppings you like—sesame seeds, sunflower seeds, nigella seeds, poppy seeds, pumpkin seeds, coarse salt, or dried garlic.
- Bake at 330°F (165°C) for 15 minutes. Remove from the oven, cut into crackers, and return to the oven for another 15–20 minutes, or until crisp.

Crackers from just 2 ingredients!
Notes
- In many ovens, baking isn’t perfectly even—edges may crisp faster than the center. You can bake on convection (fan/turbo) and lower the temperature slightly, which helps but doesn’t completely solve the issue. Another option is to remove the crackers that are ready and return the rest to the oven for a few more minutes.
