Old-Fashioned Sour Cream Cake

For the cake:
- 4 (7 oz / 200 g each) containers sour cream (any fat percentage)
- 4 large eggs
- 1 cup sugar
- 2.8 oz (80 g) instant vanilla pudding mix
- 4 tablespoons cornstarch
- 5-7 oz (150-200 g) graham crackers or Petit Beurre cookies
For the topping:
- 7 oz (200 g) container sour cream
- 2 tablespoons powdered sugar
Instructions
– In a large bowl, add the sour cream, eggs, and sugar, and whisk well. If you like, you can add vanilla extract. – Add the pudding mix and cornstarch and whisk until smooth. – Arrange an even layer of graham crackers or cookies in an 8-inch (20 cm) pan and pour the batter on top. – Bake in a preheated 325°F (165°C) oven for 45 minutes. – Meanwhile, whisk together the sour cream and powdered sugar. When the cake is ready, spread the sour cream mixture evenly on top and bake for another 10 minutes. – Let cool completely before slicing.
