Perfect Pecan and Honey Pie

Instructions


1. Prepare the filling:1. Finely chop the pecans and mix them in a bowl with honey, melted butter, eggs, and flour.
2. 2. Cut the dough to fit the pie tin, pressing it firmly into the base and sides. Trim off the edges. ( to fit a 10in pie or two 7in pie tins).
3. 3. Fill the crust with the pecan mixture, ensuring it reaches about ¾ of the height of the tin.
4. 4. Bake in a preheated oven at 340°F for 15 minutes.
5. 5. Remove from the oven—the filling should still be soft at this stage. Arrange the halved pecans on top in a circular, tightly packed pattern.
6. 66. Generously brush the pecans with honey and return to the oven for another 15 minutes, or until the edges are lightly golden.
7. 7. For a stronger honey flavour, drizzle extra honey on top after baking.
