Ingredients
- 3-4 peeled carrots
- 1 zucchini
- 3 large (L) eggs
- 1 cup (8.8oz or 250g) ricotta or cottage cheese
- 4 heaping tablespoons self-rising flour
Instructions
- Grate the carrots and zucchini using the fine side of a grater, then squeeze out excess liquid. Transfer to a bowl.
- Add the remaining ingredients and mix well.
- Transfer to a greased English loaf pan or 8.6in (15-22cm) baking dish. (Optional: sprinkle sesame seeds on top.)
- Bake in a preheated oven at 375°F for 40-50 minutes, or until golden brown.
